Pairing Vermont cheese with beer and wine We are often asked which wines or beers pair best with specific cheeses. That's a tough question because
it's really a matter of personal preference, but as a general rule we like to combine dry whites and amber bocks with sharper cheddars. For
cheeses that are more mellow such as Sage Cheese
or Maple Smoked Cheese,
we prefer a heartier Stout beer or red wines. With this approach the drinks complement the cheese and do not overwhelm the pallet. Of course
some might wish to reverse the approach for maximum flavor sensation, and that's fine too!

Maple-Smoked Cheddar and Tomato BBQ Pizza
This Vermont cheese pizza recipe was originally made while barbecuing on a Vermont snow-covered deck at a Super Bowl party and has come a family favorite. The pie is cooked on a gas or
electric BBQ grill, but can also be made in an oven on a pizza stone or vented pizza pan. Feedback
Ingredients:
- 1 Mama Mary's 12-inch Thin & Crispy Pizza Crust
- 4 oz. Hickory & Maple-smoked Cheddar Cheese, shredded
- 1 large green tomato, thinly sliced
- 1 large red tomato, thinly sliced (optional)
- 1/4 cup BBQ Sauce
- 1 Tbsp. fresh sage, finely chopped
- 1/4 cup olive oil
- 1 tsp. dill weed
Recipe - Preheat grill to medium heat. Mix olive oil and dill weed. Lightly coat one side of pizza crust. Flip crust over
and brush on a thin layer of BBQ sauce - don't use too much sauce. Next, sprinkle maple-smoked cheddar evenly over crust. Arrange thin slices of
green tomato or red tomato (optional) over the top of cheese. Sprinkle with sage. Place pizza on grill and cover with tin foil. Close lid and cook
for 5-10 minutes until crust is golden brown and cheese is melted. Check frequently and rotate pizza with pizza spatula periodically to ensure
even cooking. Remove from grill, slice and serve.
South-of-the-border Chipotle Cheddar Mac & Cheese
Cabot's Chipotle Cheddar Cheese is made with morita jalapeno chilies. The resulting flavor is smoky, with a bit of kick!
Perfect for southernstyle recipes that need a little spice, but NOT an overwhelming amount of heat. Pairs nicely with
Bud Lite Lime or Corona beers. Perfect for Mac & Cheese - southern-style! Feedback
Ingredients:
- 16 oz. of Cabot’s Chipotle Cheddar Cheese, finely grated
- 1/4 cup corn starch or flour
- 1/4 cup water
- 2 cups elbow macaroni
- 1 Tbsp. butter and 4 cups milk
- 2 tsp. oregano
- 1/4 cup crushed corn flakes
Recipe - Cook elbow macaroni, drain and put back into pot. In a small juice glass blend corn starch and water until smooth. In a medium sauce pan add
milk and butter and begin to heat over medium-high heat. Stir frequently. Add cheese to milk, along with oregano and corn starch mixture.
Continue to cook and stir until cheese melts and mixture becomes thick. Add mixture to macaroni and mix. Spray an 8x12 baking dish and add
macaroni mixture to baking dish. Sprinkle crushed corn flakes over top. Bake at 350 degree for 30-40 minutes, and until top browns.
Serves: 4
