There are some fruits that are a "must have" come harvest season, and ripe blackberries are certainly one of them. Of course if they're not
available WILD in your area, or your supermarket isn't carrying them, then we have a solution - a blackberry flavored pancake mix! We would advise to combine
both, our blackberry pancake mix
and wild blackberries as a garnish, but certainly the blackberry pancake mix all by itself is delicious, especially when topped with pure
Vermont maple syrup! We know, we thoroughly taste tested all our mixes. We have the love handles to prove it!
Making "Perfect Pancakes" is really a science and also a matter of subjective, personal preference. For example, take these two stacks of
blueberry flavored pancakes.
They were cooked using the same mix, griddle, and temperature. The only difference was the variation in the amount of water versus the amount of powder used in the recipe. For lighter, thinner pancakes
more water and less powder is used. For thicker, darker cakes less water and more powder is used. It's also important when cooking thick pancakes that the griddle temperate NOT be too hot - give
the cakes time to cook through before the bottom browns. If when you flip a big pancake it splatters, then the griddle is too hot and your cake didn't have time to cook through.
