Melt-in-your-mouth Vermont Maple Candy. Simply delicious!
Pure maple candy, sometimes called maple syrup candy, is made by cooking maple syrup without any other ingredients, and pouring the
syrup into molds. This maple candy recipe can be done at home in small batches, no more than a quart at a
time; Heat the syrup to about 243 degrees. Remove from the heat and begin stirring the hot, thick syrup
immediately. Continue stirring until you see the color become slightly lighter, and the batch barely begins
to stiffen. Pour the partly cyrstallized syrup into molds to harden. As with anything, practice makes
perfect. Please, be extra careful with hot liquids.
